Today was lovely and warm. We went to Central Park after lunch and just walked around.

Jo has been talking about carbonara. How do you make that?

With pancetta or bacon.
Best to use a good sized frying pan.
Get a thick slice of either and cut into small cubes, saute in olive oil, add onions saute until transparent, try not to burn. In a bowl add 2-3 egg yolks, grated parmigiano a pinch of salt and pepper. Cook pasta. when pasta is done place in bowl with eggs, toss and then place in pan to cook for an additional minute. serve with more parmigiano

Thanks, Sara. How much do you mean by a thick slice? Like 1/4 a pound? 1/2 a pound?

1/4 pound.
